Thai Fish Curry

This is a recipe for a really simple but yummy thai fish curry. You will need:

2 tsp peanut oil
2 cloves garlic, crushed
1 tsp grated fresh ginger
approx 4 tsp ground turmeric (you can add more to increase flavour & colour)
2 fresh red thai chillies, sliced
400ml can coconut cream
1 stick fresh lemongrass, cut into 2cm pieces
2 firm white fish fillets (cod works a treat)
2 tbsp fish sauce
2 spring onions, sliced

Heat oil in wok or large frying pan; cook garlic, ginger, turmeric and chillies, stirring until fragrant. Add coconut cream and lemongrass; bring to a boil. Add fish, reduce heat; simmer covered for about 8 mins or until fish is cooked as desired. Remove lemongrass pieces. Remove the fish and place in a bowl and cover to keep warm. Bring sauce to a boil for approx 3 mins. Remove from heat and stir in fish sauce and onion. Pour sauce over fish in bowl.
And serve!
